Peanut butter stuffed dates are a simple, indulgent and nutritious treat, best enjoyed in those moments when all you can think about is a sweet snack.
We think they're the perfect simple yet showstopping addition to a special occasion like Eid or Easter. For such important dinner table settings we find a chocolate dip is the perfect finish touch to these gems. You can also make these ahead of time and keep them in the freezer until you're ready!
Ingredients + Method:
You'll need Medjool Dates, your favourite Pip & Nut Peanut Butter and a bar of milk or dark chocolate for melting.
Simply slice the dates lengthways on one side so you've created a little pocket for your peanut butter. Slowly melt your chocolate in a heat-proof bowl placed over a saucepan of boiling water. Once melted, set the melted chocolate to one side.
Fill the dates with peanut butter, then dip them into your melted chocolate.
For a mix of texture and extra nutty taste try rolling the chocolate-covered dates in chopped nuts, we think peanuts or pistachios are the tastiest option.
Leave your chocolate-covered, peanut butter-filled dates to full cool either in the fridge or at room temperature then enjoy or freeze until needed.
Serve with a ramekin of extra peanut butter for dipping!
